Sausage Making: Learn to break down fresh pork, blend creative seasonings and utilize techniques for grinding, stuffing and linking sausages. Taste your creations and take home your sausages.

Curing Heritage Breed Pork: Learn how to transform primal cuts into classic cured products such as prosciutto, bacon, lonza and coppa. Covers dry curing, salting, seasoning and hanging protocols. Taste a variety of cured meats and take home your creation.

The Art of Offal: This course showcases the often unused organ meats from heritage hogs. Heart, liver, kidneys and meat from the head are all incorporated in recipes to ensure all parts of the animal are utilized. Learn and taste a variety of offal recipes.
