Curing Heritage Breed Pork: Learn how to transform primal cuts into classic cured products such as prosciutto, bacon, lonza and coppa. Covers dry curing, salting, seasoning and hanging protocols. Taste a variety of cured meats and take home your creation. Beer & wine included; 21+ only.

The Art of Offal: This course showcases the often unused organ meats from heritage hogs. Heart, liver, kidneys and meat from the head are all incorporated in recipes to ensure all parts of the animal are utilized. Learn and taste a variety of offal recipes. Beer & wine included; 21+ only.
